Bacon Wrapped Scallops
I feel a little silly giving this tutorial. It's not really even a recipe...it's more like a "just do this and it's awesome". But, hey...if you like bacon and I like bacon, we can spend the next few minutes walking over this together.

30-ish large scallops (washed and lightly dried)
15-ish slices of bacon
3-4 Tb of garlic oil
salt and pepper to taste
I made it super easy by grabbing two packages of frozen scallops from Trader Joe's. It turned out to be plenty for two people. Wash, dry, leave in an area that's super easy to access. You get to play in a minute.
Take 1/2 to 1/3 of a slice of bacon and wrap around each scallop (hold with a toothpick speared through the entire bit). Pop in a cast-iron skillet and drizzle with garlic oil. Braise on med-high for about 5-7 minutes, each side (just turn over once). Add the salt and pepper to suit your taste.
If you want them extra crispy (me, me!), pop them in the oven and broil for approximately 2-3 minutes. Voila!
